ORIONE CARE IRELAND ARE SEEKING A PROFESSIONAL CHEF TO WORK IN OUR DAY
SERVICES/RESIDENTIAL HOMELESS SERVICES. PART ?TIME (MONDAY ?

THE ROLE

Working chef in a professional role and environment, your core
responsibilities include:

* Adhere to all current HACCP Regulations (Hazard Analysis and
Critical Control Points)
* Adhere to First Aid, Hygiene, Health & Safety rules at all times
* Planning and costing of menus to meet the dietary requirements and
requests of residents and day centre clients within allocated
financial resources.
* Ensure individuals on special diets or with specific cultural
needs are catered for and that choice is also available.
* Ensures food is prepared and cooked in accordance with current
food hygiene regulations and guidelines.
* Ensures the standard of hygiene in the kitchen meets all Health
and Safety Regulations and records are maintained to demonstrate this.
* To comply with the policy on personal hygiene and uniform.
* To follow cleaning rotas throughout the food production and
service areas.
* Ensures all equipment is operated, maintained and serviced as per
manufacturer?s instructions and Health and Safety
requirements/recommendations.
* Ensures risk assessments are conducted and adequate records
retrained and reviewed at regular intervals.
* Ensure all cleaning materials and substances used in the kitchen
are handled and stored in accordance with Control of Substances
Hazardous to Health requirements.
* Ensures that catering staff adhere to all legislative
guidelines/requirements and company policies and procedures.
* To ensure that the control procedures in respect of food
production, portion control, purchasing and stock management are fully
implemented.
* To complete stock controls and audits in a timely and accurate
manner.
* Arrange for equipment purchases and repairs.
* To undertake such other duties as may be determined from time to
time within the general scope of the post and to be aware that social
activities connected with the service may require work attendance
outside normal working hours.
* Support the manager in the implementation of the strategic and
operational action plan.

ESSENTIAL:

* Food Safety / HACCP training
* Understanding of the role of diet in dietary related conditions
such as obesity, diabetes, cardiovascular disease, celiac, etc.
* Higher Certificate in Culinary arts or
* FETAC Level 6 Major Award: Advanced Certificate in Professional
Cookery or
* City and Guilds ? Culinary Skills
* 3 years previous experience working in a food environment.
